CREAMY MACARONI SALAD/how to make LOW-FAT EASY PASTA SALAD


This is my favorite Homemade Creamy Macaroni Salad recipe! It’s a classic healthy pasta salad dish and nothing fancy, just that delicious comfort food which is very easy to make and most of the ingredients are already available at home. It’s tossed with colorful veggies and covered in a low fat creamy dressing. Hence, making it the best summertime salad.

HOW DO YOU MAKE THE LOW-FAT PASTA SALAD MORE NUTRITIOUS AND REDUCE THE CALORIES?

In this recipe, I have used Greek Yogurt is what is commonly known as Hung curd in India. It is normally made by straining the plain curd to get rid of the fat and extra water. Therefore, it results in the thickening of the curd. The resultant curd is considered very healthy as it contains double the amount of protein than the same quantity of curd. Alternatively, you can use Fat free Greek Yogurt for this recipe for weight loss purpose too to get more protein than fat. 

EASY MACARONI SALAD VARIATIONS

I have used elbow pasta which makes it ideal for macaroni salad. However, you can use any type of pasta including the penne, fusilli or farfalle. Also, with respect to vegetables, I have tried to keep it minimal by adding veggies like red bell pepper, capsicum, cucumber, sweet corn kernels and apples. Basically, this is to incorporate all the colors in the salad to make it look gorgeous. But you can add other veggies as per your taste and preference. Additionally, add 1 tsp. of Dijon Mustard Sauce to the dressing to give the pasta salad a twist.

SERVING SUGGESTIONS FOR CREAMY MACARONI SALAD

Creamy macaroni salad is perfect for parties, potlucks, picnics, and of course they are a wonderful side dish for lunch or dinner. This classic and easy macaroni salad is great for making the night before a picnic or potluck because making it ahead of time gives the macaroni time to soak up all the flavor. You can store this homemade macaroni salad in the fridge for up to a day before serving it.

INGREDIENTS

FOR THE SALAD

3 cups Elbow Macaroni, boiled
½ cup Bell Peppers (Red and Green) diced
½ cup Cucumber, diced
¼ cup Sweet Corn, boiled
½ cup Apple, diced
Salt to taste

FOR THE DRESSING

1 cup Hung Curd / Greek Yogurt
2 tsp Apple Cider Vinegar
1 tsp lemon juice
1 ½ tbsp Honey
¼ tsp Black Pepper, freshly ground
1 tsp Oregano Seasoning
Salt to taste

METHOD

For the salad

First of all, cook macaroni with salt according to package instructions.

Now drain and rinse under cool water until completely cooled; set aside.

In a large salad bowl, combine Bell Peppers, Cucumber, Sweet Corn and Apple.

For the dressing

Firstly, in a mixing bowl, whisk together Yogurt, Lemon Juice, Vinegar, Honey, Salt, Oregano Seasoning and Pepper.

Gently toss pasta ingredients with dressing until well-combined.

Now cover and rest in the refrigerator for an hour to absorb all the flavors.

Finally, serve pasta salad / macaroni salad sprinkled with oregano seasoning.

RECIPE NOTES

Firstly, take any shape of pasta of your choice. However, this pasta salad tastes great when prepared with elbow macaroni.

While cooking pasta make sure to add 1 tsp of oil, this helps to get non-sticky pasta. 

Moreover, add vegetables of your choice like lettuce, blanched broccoli, carrots and cherry tomatoes.

Optionally, 1 tsp. of Dijon Mustard Sauce gives the pasta salad a twist.

Additionally, substitute ½ cup mayonnaise to make the pasta more creamy and tasty, (if you are not bothered about the fat). However, you’ll have to reduce the greek yogurt/hung curd by the same amount.

Finally, pasta salad/macaroni salad recipes taste great when served chilled.
